March 28, Day 1 of COVID Quarantine Lock Down.
Movie: I am Legend- it’s about a scientist who is one of the living survivors in a plague mutated world. Zombie apocalypse type of story with a dog.
Pretty much how it feels like this past few days to be honest. This virus has just caused panic and fear and caused businesses to shut down, and unfortunately our shops are part of them that didn’t make it. Too much anxiety, too much stress, too much negativity. It is but human nature I guess to feel down and low given this sort of situations. So in times like this when things are as grey as they can fucking be, we need to find positivity, something that will keep us inspired and going and just moving. Our very own Peter Panda Dance sort of thing.
Maybe some of us would read, some would TIK TOK, I turn to cooking. So I open the fridge and… fuck, there is nothing in it. I go down to the supermarket and among empty shelves all there was was a few bits and pieces of veggies left over. Even the frozen section is empty. All we really need now is a zombie hoard walking down the street. But remember be positive, be inspired. I got home and looked to find what I had in the pantry and in the fridge and i got inspired…

Coconut Pancakes
with Preserved Local Berry and Mango Jam form Baguio
2 Cups (300gms) Self Raising Flour
5 TBSP (70gms) Caster Sugar
1 tsp Salt (5gms) Salt
1 Cup (240mls) Milk
1 Cup (240mls) Coconut Cream
1 Whole Egg
5 TBSP (75mls) Coconut Oil (or any oil that you have)
4 Egg Whites
1tsp (3gms) Cream of Tartare
STEP 1 – Combine all dry ingredients and whisk to break it up.
STEP 2 – Combine whole egg, milk, coconut cream and oil in a bowl lightly whisk and mix with dry ingredients. Whisking while pouring it in so as to create a nice batter.
STEP 3 – Using a hand mixer whisk egg whites and cream of tartare until it forms soft peaks.
STEP 4 – Gently fold in meringue with your batter and make sure not to over mix it.

STEP 5 – Oil a skillet and cook pancakes in batches. I used a small ladle to measure my pancakes. Wait for bubbles to form on top before you turn them over.

I served my pancakes with whatever I had on hand. And today it was, Preserved Local Berries from a Sunday Market in Pakenham and Mango Jam a friend brought back from Baguio, in the Philippines. You can have yours with whatever you want too, what’s important we enjoy it.
